Ingredients
  

For the Vegetable Layers
  • 2 large eggplants Aubergines sliced into ½-inch rounds
  • 2 medium potatoes thinly sliced
  • 1 red bell pepper diced
  • 1 zucchini diced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Spicy Tomato Filling
  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1 red chilli finely chopped
  • 1 red bell pepper diced
  • 400 g 14 oz canned chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cinnamon
  • ½ –1 teaspoon chilli flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste
  • 100 g ¾ cup cooked lentils
  • 2 tablespoons chopped fresh parsley
For the Béchamel Sauce
  • 50 g 4 tablespoons butter
  • 50 g ⅓ cup plain flour
  • 500 ml 2 cups milk
  • ¼ teaspoon ground nutmeg
  • 75 g ¾ cup grated Parmesan or mature cheddar
  • Salt and black pepper to taste
  • 1 egg lightly beaten

Method
 

  1. Preheat the oven: Preheat your oven to 220°C (425°F). Line two large baking trays with parchment paper.
  2. Prepare the vegetables: Arrange the eggplant and potato slices on the trays. Add the diced zucchini and bell pepper. Drizzle with olive oil and season with salt and black pepper.
  3. Roast the vegetables: Roast for 20–25 minutes, turning the vegetables halfway through, until tender and lightly golden. Remove from the oven and reduce the temperature to 190°C (375°F).
  4. Start the spicy filling: Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the onion and cook for 4–5 minutes until softened.
  5. Add aromatics: Stir in the garlic and chopped fresh chilli. Cook for 1 minute until fragrant.
  6. Cook the vegetables: Add the diced red pepper and cook for another 3–4 minutes until slightly softened.
  7. Build the tomato sauce: Stir in the chopped tomatoes, tomato paste, cumin, smoked paprika, cinnamon, chilli flakes, oregano, thyme, balsamic vinegar, salt, and black pepper.
  8. Add the lentils: Stir in the cooked lentils and simmer the mixture for 12–15 minutes, stirring occasionally, until thick and rich. Stir through the fresh parsley.
  9. Make the béchamel: Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute.
  10. Add the milk: Gradually whisk in the milk, making sure there are no lumps. Cook for 4–6 minutes, whisking frequently, until the sauce thickens.
  11. Finish the topping: Remove the béchamel from the heat. Stir in the nutmeg, grated cheese, salt, and black pepper. Allow it to cool slightly, then whisk in the beaten egg.
  12. Layer the moussaka: Lightly grease a large baking dish. Arrange half of the roasted eggplant and potatoes across the bottom. Spoon over the spicy lentil and tomato filling.
  13. Add the remaining vegetables: Layer the remaining eggplant, potatoes, zucchini, and roasted peppers over the filling.
  14. Add the béchamel: Pour the creamy béchamel evenly over the vegetables and spread it gently with a spatula. Sprinkle with a little extra cheese if desired.
  15. Bake: Bake at 190°C (375°F) for 30–35 minutes, or until the top is golden brown and bubbling around the edges.
  16. Rest before serving: Remove from the oven and allow the moussaka to rest for 10–15 minutes. Garnish with fresh parsley, slice, and serve warm.

Chef’s Tips
  • Adjust the spice: Use mild chilli for gentle heat or increase the chilli flakes and fresh chilli for a fiery moussaka.
  • Keep the filling thick: Simmer the tomato and lentil mixture until most of the excess liquid has cooked away to prevent a watery casserole.
  • Roast instead of fry: Roasting the vegetables gives them a delicious caramelised flavour while keeping the recipe lighter.
  • Use cooked lentils: Green or brown lentils work particularly well because they hold their shape and add satisfying texture.
  • Rest before slicing: Allowing the moussaka to rest helps the layers firm up and makes serving much easier.
  • Make it ahead: Assemble the dish several hours in advance, refrigerate, and bake when ready. Add a little extra baking time if it is chilled.
  • For a golden crust: Sprinkle a little extra grated cheese over the béchamel before baking for a beautifully browned topping.
