Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 ½ cups breadcrumbs preferably Italian-style
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil optional, for garnish

Method

  2. Preheat oven to 375°F (190°C).
  3. Season chicken breasts with salt and pepper.
  4. Dredge each chicken breast in flour, shaking off excess, then dip into beaten eggs, and coat with a mixture of breadcrumbs and Parmesan.
  5. Heat olive oil in a large oven-safe skillet over medium heat. Fry chicken breasts for 3–4 minutes per side until golden brown.
  6. Pour marinara sauce over the chicken in the skillet.
  7. Sprinkle shredded mozzarella evenly on top of each piece of chicken.
  8. Transfer skillet to the oven and bake for 20 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  9. Garnish with fresh basil before serving.

  12. Use homemade marinara for extra flavour.
  13. Serve with pasta, garlic bread, or a fresh green salad.
  14. For a lighter version, bake chicken without frying first, brushing with olive oil instead.
