Method
- Prepare the vegetables: Place the sliced onion, potato, carrot, spinach, green chilli, and fresh coriander in a large mixing bowl.
- Add the spices: Sprinkle in the cumin seeds, ground coriander, turmeric, chilli powder, garam masala, ajwain, and salt. Toss everything together so the vegetables are evenly coated.
- Make the batter: Add the chickpea flour and baking soda. Mix well. Gradually add the water, a little at a time, until the vegetables are coated in a thick, sticky batter. Avoid making the batter too runny.
- Rest the mixture: Let the pakora mixture rest for 5–10 minutes. The vegetables will release some moisture, helping create the right consistency.
- Heat the oil: Pour enough vegetable oil into a deep, heavy-based pan for frying. Heat to approximately 175–180°C (350–355°F). Test the oil by dropping in a small amount of batter—it should rise and sizzle immediately.
- Shape the pakoras: Take small portions of the vegetable mixture and gently drop them into the hot oil. Do not overcrowd the pan, as this can lower the oil temperature.
- Fry until golden: Fry the pakoras for approximately 3–4 minutes on each side, turning occasionally, until crisp and deep golden brown.
- Drain: Remove the cooked pakoras with a slotted spoon and place them on a wire rack or paper towels to drain excess oil.
- Continue frying: Repeat with the remaining mixture, allowing the oil to return to the correct temperature between batches.
- Serve: Serve the vegetarian pakoras immediately while hot and crispy with mint chutney, coriander chutney, or tamarind sauce. Add lemon wedges for a fresh, tangy finish.

- Keep the batter thick: A thick batter clings to the vegetables and creates crispier pakoras. Add water gradually rather than all at once.
- Slice vegetables thinly: Thin vegetables cook quickly and evenly, giving the pakoras a delicious texture.
- Don't overcrowd the pan: Fry in small batches to maintain the oil temperature and achieve a crisp exterior.
- Use a wire rack: Draining the pakoras on a wire rack helps prevent the bottoms from becoming soggy.
- Make them extra crispy: For an even crunchier texture, replace 1–2 tablespoons of chickpea flour with rice flour.
- Adjust the heat: Add extra green chilli or chilli powder for spicy pakoras, or reduce it for a milder version.
- Serve immediately: Pakoras are at their best straight from the fryer while the outside is crisp and the vegetables are tender.
- Try different vegetables: Cauliflower, cabbage, sweetcorn, courgette, or bell peppers can be added depending on what you have available.
