Ingredients
  

  • 12 oz egg noodles
  • 2 tablespoons olive oil or butter
  • 1 medium onion finely chopped
  • 8 oz mushrooms sliced
  • 2 cups fresh spinach chopped
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup cottage cheese or ricotta cheese
  • 1 cup shredded cheddar or Gruyère cheese
  • ½ cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons chopped fresh parsley optional
  • ½ cup breadcrumbs optional, for topping
  • 1 tablespoon melted butter for topping, optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package directions until al dente. Drain and set aside.
  3. Heat olive oil or butter in a skillet over medium heat. Sauté onion and mushrooms for 5–6 minutes until softened.
  4. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  5. In a large bowl, whisk together eggs, sour cream, cottage cheese, milk, garlic powder, salt, black pepper, and paprika.
  6. Stir in cooked noodles, vegetable mixture, shredded cheese, and parsley until evenly combined.
  7. Transfer mixture to prepared baking dish and spread evenly.
  8. If using topping, combine breadcrumbs with melted butter and sprinkle over casserole.
  9. Bake for 40–45 minutes until golden brown and set in the center.
  10. Let rest for 10 minutes before slicing and serving.
