- Cook egg noodles according to package directions until al dente. Drain and set aside.
- Heat olive oil or butter in a skillet over medium heat. Sauté onion and mushrooms for 5–6 minutes until softened.
- Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
- In a large bowl, whisk together eggs, sour cream, cottage cheese, milk, garlic powder, salt, black pepper, and paprika.
- Stir in cooked noodles, vegetable mixture, shredded cheese, and parsley until evenly combined.
- Transfer mixture to prepared baking dish and spread evenly.
- If using topping, combine breadcrumbs with melted butter and sprinkle over casserole.
- Bake for 40–45 minutes until golden brown and set in the center.
- Let rest for 10 minutes before slicing and serving.
