Ingredients
  

  • 1 tin 400 g black beans, drained and rinsed
  • 1 tin 400 g black-eyed peas, drained and rinsed
  • 1 tin 325 g sweetcorn, drained
  • 250 g cherry tomatoes quartered
  • 1 red bell pepper finely diced
  • 1 small red onion finely diced
  • 1 large avocado diced
  • 1 small jalapeño finely chopped, optional
  • 30 g fresh coriander chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon ground cumin
  • ½ teaspoon chilli powder
  • Salt and freshly ground black pepper to taste

Method
 

  1. Prepare the beans and corn: Drain and rinse the black beans and black-eyed peas thoroughly. Drain the sweetcorn and add everything to a large mixing bowl.
  2. Chop the vegetables: Add the quartered cherry tomatoes, diced red pepper, red onion, and finely chopped jalapeño if using.
  3. Add the fresh ingredients: Gently fold in the chopped fresh coriander and diced avocado.
  4. Make the dressing: In a small bowl, whisk together the lime juice, olive oil, red wine vinegar, honey or maple syrup, cumin, chilli powder, salt, and black pepper.
  5. Dress the salad: Pour the dressing over the bean and vegetable mixture. Toss gently until everything is evenly coated, taking care not to mash the avocado.
  6. Chill the Cowboy Caviar: Cover and refrigerate for 20–30 minutes before serving. This allows the flavours to blend together.
  7. Taste and adjust: Before serving, taste and add extra lime juice, salt, pepper, or chilli if desired.
  8. Serve: Serve chilled or at room temperature with tortilla chips, or enjoy as a colourful side dish with grilled meats, fish, tacos, or other favourite meals.

Notes

Chef’s Tips
  • Add the avocado last: Mix the avocado in gently just before serving to help prevent it from becoming mushy.
  • Let the flavours develop: Although you can serve Cowboy Caviar immediately, chilling it for 20–30 minutes gives the dressing time to flavour the beans and vegetables.
  • Adjust the spice: Leave out the jalapeño for a mild version or add extra fresh chilli for more heat.
  • Use fresh lime: Freshly squeezed lime juice gives the dressing a brighter, fresher flavour than bottled juice.
  • Try different beans: Kidney beans, cannellini beans, or pinto beans can be added or substituted according to your preference.
  • Make it a meal: Add diced grilled chicken, prawns, feta cheese, or cooked quinoa for a more substantial dish.
  • Serve it creatively: Enjoy it as a dip with tortilla chips, spoon it over tacos, or serve it alongside grilled chicken or fish.
