- Preheat the oven to 190°C (375°F). Lightly grease a 12-cup muffin tin with olive oil or cooking spray.
- Wash and finely chop the spinach, bell peppers, and onion. Pat the vegetables dry to remove excess moisture.
- In a large bowl, whisk the eggs and milk until smooth and well combined.
- Stir in the cheddar cheese, bell peppers, spinach, onion, garlic powder, oregano, salt, and black pepper.
- Divide the egg and vegetable mixture evenly between the prepared muffin cups, filling each about three-quarters full.
- Bake for 18–20 minutes, or until the egg muffins are puffed, set in the centre, and lightly golden around the edges.
- Remove from the oven and let them cool in the tin for 5 minutes.
- Carefully loosen the edges with a small knife or spatula and remove the muffins.
- Serve warm or allow them to cool completely before storing in an airtight container in the refrigerator.
Notes
- Remove excess moisture: Squeeze or pat spinach dry so the muffins don’t become watery.
- Don’t overfill: Leave some space in each muffin cup because the eggs puff up while baking.
