Egg Bubble & Squeak, sometimes playfully called Egg Hubble Bubble,is a comforting British-inspired breakfast dish made from crispy potatoes,cabbage, and perfectly cooked eggs.

Ingredients
  

  • 2 cups cooked potatoes mashed or chopped
  • 1 cup cooked cabbage finely chopped
  • 1 small onion diced
  • 2 tablespoons butter or oil
  • 4 large eggs
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder optional
  • 1 tablespoon fresh parsley chopped (optional)

Method
 

  1. Heat butter or oil in a large skillet over medium heat.
  2. Add diced onion and sauté until soft and translucent.
  3. Stir in the cooked potatoes and cabbage, mixing well. Season with salt, pepper, and garlic powder if using.
  4. Press the mixture down into the pan and cook undisturbed for 8–10 minutes until the bottom is golden and crispy.
  5. Flip sections of the mixture or stir gently, then cook for another 5–7 minutes.
  6. Create small wells in the mixture and crack an egg into each space.
  7. Cover the pan and cook until the eggs are set to your liking.
  8. Garnish with fresh parsley and serve hot.

Notes

Chef’s Tips
  • Use leftover roast potatoes and greens for the best flavor and texture.
  • Don’t stir too often letting it crisp is key to authentic bubble & squeak.
  • Add grated cheese for a richer, more indulgent version.
  • For extra crunch, finish under a grill (broiler) for a few minutes.
  • Swap cabbage for Brussels sprouts or kale for a seasonal twist.
