Ingredients
  

  • 8 large eggs
  • ½ cup milk
  • ½ cup grated cheddar cheese
  • ½ red bell pepper finely diced
  • ½ green bell pepper finely diced
  • 1 cup fresh spinach chopped
  • ¼ small onion finely diced
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil or cooking spray for greasing

Method
 

  1. Preheat the oven to 190°C (375°F). Lightly grease a 12-cup muffin tin with olive oil or cooking spray.
  2. Wash and finely chop the spinach, bell peppers, and onion. Pat the vegetables dry to remove excess moisture.
  3. In a large bowl, whisk the eggs and milk until smooth and well combined.
  4. Stir in the cheddar cheese, bell peppers, spinach, onion, garlic powder, oregano, salt, and black pepper.
  5. Divide the egg and vegetable mixture evenly between the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 18–20 minutes, or until the egg muffins are puffed, set in the centre, and lightly golden around the edges.
  7. Remove from the oven and let them cool in the tin for 5 minutes.
  8. Carefully loosen the edges with a small knife or spatula and remove the muffins.
  9. Serve warm or allow them to cool completely before storing in an airtight container in the refrigerator.
